Compared to using ground beef like traditional meatloaf, this turkey meatloaf recipe has less saturated fat. With the addition of fresh spinach, this recipe is packed with flavor and nutrients. It has become a community favorite!
Serves 4-6
Ingredients
- 1/4 cup to 1/3 cup panko breadcrumbs
- 1 tablespoon olive oil
- 1 onion, diced
- 5 ounce bag of baby spinach
- 1 pound ground turkey
- 2 tablespoons Parmesan cheese
- 1 large egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
GLAZE:
- 3 tablespoons ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot sauce
Instructions
- Preheat oven to 375°F. Lightly oil a 9×13 baking dish and set aside.
- In a large skillet over medium heat, sauté the onions in olive oil until softened and golden, about 5 minutes. Add spinach and stir just until wilted. Remove from heat and let cool.
- Meanwhile, mix together the breadcrumbs, egg, turkey, cheese, salt and pepper ina large bowl. Add the spinach and onions and mix well. Gently form into a loaf shape and place in the prepared baking dish. Cook for 45 minutes and remove from oven.
- For the glaze, combine glaze ingredients in a small bowl and brush over meatloaf. Return it to oven for an additional 10 minutes or until cooked thoroughly (use a meat thermometer to make sure meat reaches 165°F). Remove from oven and let rest for 10 minutes. Slice and enjoy!
