Vegetable Calzone

If you are looking for a fun way to include more veggies in your diet, try this delicious calzone recipe. Healthy ingredients stuffed inside a fluffy crust will make this one a hit with family and friends.

Serves 4

Ingredients

  • 1 pound pre-made pizza dough (or substitute your own recipe)
  • 1 cup (4 ounces) shredded mozzarella cheese
  • 1 cup baby spinach, chopped
  • ½ cup broccoli, finely chopped
  • ¼ cup onion, chopped
  • ¼ cup red pepper, chopped
  • ½ cup marinara sauce
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 475 degrees. Divide the dough into four equal pieces and roll the dough to make circles about 9 inches in diameter.
  2. Sprinkle ¼ cup of mozzarella across the center of each round. (This protects the crust–avoid putting the marinara sauce directly on the dough).
  3. Top each calzone with ¼ cup spinach, 2 tablespoons broccoli, 1 tablespoon onion, 1 tablespoon red pepper, and 2 tablespoons marinara sauce.
  4. Sprinkle with 2 tablespoons Parmesan cheese.
  5. Fold one side of the round over to enclose it, and then pinch the edges together to seal.
  6. Poke a few holes in the top to vent. Bake for 15 minutes.

***This recipe can also be made in an air fryer: Bake in batches for 8 minutes each at 360 degrees.
