Ingredients
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 lb fresh or frozen spinach, thawed and squeezed dry
- 4–5 lasagna noodles, enough to cover one layer in an 8×8″ baking pan
- 4 oz Gruyere or Swiss cheese, grated
Instructions
Preheat the oven to 350°F.
Heat water in a large saucepan until boiling. Add the lasagna noodles and cook about 3 minutes less than package time.
In a large skillet, sauté the onion in the olive oil. When the onion is translucent, add the garlic and sauté for a few minutes more. If using frozen spinach, add to the pan and cook for two minutes. If using fresh, add as much spinach as you can to the skillet, tossing frequently until the spinach wilts. Keep adding spinach until it is all cooked.
Put half the spinach into an 8×8″ pan and top with the lasagna noodles. Add the rest of the spinach and top with the cheese. Bake for 20 minutes, or until the cheese is melted and starting to brown.
