Garlicky Greens

Garlicky Greens

Serves 2-4

Ingredients

  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 1 whole garlic head, sliced horizontally
  • Beet greens from 2 bunches of beets. If you don’t have beet greens use other winter greens such as kale, chard, collard, or mustard greens
  • 1 tablespoon mustard
  • 2 tablespoons Parmesan cheese, grated
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onions and the garlic with the cut sides down.   
  2. Continue cooking, stirring occasionally and keeping the garlic heads against the bottom of the skillet, until the onions begin to caramelize.   
  3. Add the greens, mix in with the onions, and stir occasionally until the greens are tender.   
  4. Add the mustard and stir well.   
  5. Add the Parmesan cheese, and season with salt and pepper.   
  6. Remove the garlic and serve. If you prefer, the garlic can be squeezed out of the garlic head halves, and chopped up and stirred into the greens for extra garlic flavor, or reserved for another use.
