Ingredients
- 2 ½ cups cooked whole grains, like brown rice, quinoa, or farro
- 1 ¼ to 1 ½ cups low fat dairy or soy milk (depending on the moisture of the other ingredients)
- 2 eggs
- 1 tsp extract of your choice, like almond, vanilla, or orange
- 1 tsp spices of your choice, like cinnamon, apple pie spice, ginger, or cardamom
- ¼ cup sweetener, like maple syrup or raw sugar (optional)
- 2–3 cups berries, stone fruit, thinly sliced apples, or other fruit
- ¼ cup candied ginger or orange peel, finely chopped (optional)
- 1 cup walnuts or other nuts, chopped (optional)
Instructions
Preheat the oven to 350°F.
Spread out the cooked whole grains in a 9 x 13-inch casserole dish; an oval or round pan will work, as well.
In a separate container, whisk together the milk and eggs. Mix in any spices, extracts, and sweetener, if using. Pour the egg mixture over the whole grains, then sprinkle the fruit, nuts, and candied ginger or orange peel, if using, evenly over the top of the grain and milk mixture.
Bake for about one hour, or until the casserole is set in the middle. Serve immediately or portion into 4–5 containers for a weekly meal prep. Great served warm or cold.
