Apricot Energy Balls

These tasty treats are a no-bake option for healthy, high-energy snacking!


  • 1/3 cup dried unsweetened coconut flakes, plus additional for coating
  • 2/3 cup old fashioned oats
  • 1/3 cup creamy almond butter
  • 3 tbsp. honey
  • 1/2 cup dried apricots, diced


  1. Mix all ingredients together and form into balls.
  2. Optional: roll the balls in extra coconut flakes, which will help keep them from sticking together.
  3. Store in an airtight container for 2-3 days, or in the refrigerator for up to two weeks.
